Is it possible to import the products now, and then import the order history at a later date?

Yes. You can run the migration tool to import the products first. Then, before your new website goes live, you can perform a Recent Data Migration to import the orders. You can repeat the Recent Data Migration as many times as you want to migrate new orders (and other data) while keeping the connection between the migrated products and the orders.
