Can I migrate new orders and other data after finish the first migration process?

Yes. After you finished a migration, you can perform another migration to migrate new data by selecting the option “Continue the previous migration” in step 2. This option allows you to only migrate the entities (products, categories, customers, orders, etc) that have not been migrated in the previous migration.
